Granola

I made some granola a couple of weeks ago, and it is so good. :) I like to mix it with Grape Nuts for breakfast, or it makes a great ice cream topping.

Oh, and I should mention. It makes a TON!

Granola Mix (from Make-A-Mix)

10 cups rolled oats

1 cup wheat germ

1/2 lb. shredded coconut

2 cups raw sunflower seeds

1 cup sesame seeds

1/3 cup flax seed

3 cups chopped almonds, pecans, or walnuts

1 1/2 cups brown sugar, packed

1 1/2 cups water

3/4 cup vegetable oil

1/2 cup honey

1/2 cup molasses

1 1/2 teaspoons salt

2 teaspoons ground cinnamon

3 teaspoons vanilla

Preheat oven to 300. In a very large bowl, combine the dry stuff. In a saucepan, combine the wet stuff and spices. Heat until sugar is dissolved, but do not boil. Pour syrup over dry ingredients and stir until well combined. Spread into four or five cookie sheets (with sides) or cake pans.

Bake 20 to 30 minutes, stirring occasionally. Bake 15 minutes longer for a crunchier texture. Cool. Add raisins or dried fruit if you want. Makes 20 cups. ( I told you it makes a lot!)
