Creamed Spinach

I can't believe my kids ate spinach without a fight!  Now, in all fairness, Tanner does like spinach on his sandwiches, but only when we have Subway sandwiches -- from the restaurant or homemade.  Timmy doesn't like anything that he associates with salad.  But I don't let that stop me.  :)

My kids ate creamed spinach without complaining.  Tanner even commented on how good it was.

Proof!  Anything with cream tastes better.  ;)

and here's the recipe with my changes:

Creamed Spinach
1 1/4 pounds fresh spinach (about 2 bunches)
1 tablespoon butter
1 tablespoon all-purpose flour
1 clove minced garlic
1 oz cream cheese
grated nutmeg
salt 
pepper
1/2 cup heavy cream

Discard stems from spinach and coarsely chop spinach.

In a steamer set over boiling water steam spinach, covered, 1 minute or until just wilted. Drain spinach well.

In a saucepan melt butter. Cook garlic for a minute or two.  Careful!  Don't burn it.  Burned garlic is gross.  Add flour and cook over moderate heat, stirring, 1 minute. Stir in cream, cream cheese, and nutmeg and simmer, stirring constantly, 2 minutes (mixture will be thick). Stir spinach into sauce and season with salt and pepper.

You could also add some parmesan cheese if you want.
