Soft Whole Wheat Bread from the bread machine!

I woke up this morning to the wonderful smell of freshly baked bread. It was wonderful! I love my bread machine, and until recently I only used it for homemade white bread. I hadn’t been able to find a whole wheat recipe that didn’t come out of the machine as a brick.

No more! I have found a great whole wheat recipe, and I’ve already made it several times. It comes out great every time!

100% Whole Wheat Bread in the Bread Machine

adapted from www.kingarthurflour.com

Makes a 1 1/2 lb. loaf
1 1/4 cups lukewarm water
2 tablespoons olive or vegetable oil
1/4 cup honey
3 to 3 1/4 cups whole wheat flour
1/4 cup ground flax (you could also use sunflower, sesame or flax seeds, but this is optional
1 tablespoon vital wheat gluten
1 1/2 teaspoons salt
2 teaspoons yeast

Proof the yeast in 1/4 cup of the lukewarm water, with 1 tablespoon of sugar before you begin anything else.

Put the ingredients in the pan in the order suggested by your bread machine manufacturer. For mine, it goes like this:

water –> honey –> oil –> salt –> flour/flax/gluten –> proofed yeast

Set the machine for white bread, light crust, 1 1/2 lb loaf, and turn it on. Wait about 3 hours and enjoy!
