Sweat in 2 tablespoons olive oil:
1 cup yellow onion, diced
1 cup celery, diced
1 cup carrot, diced
1 cup ham, diced
1 tablespoon minced garlic
Add and simmer:
6 cups low sodium chicken broth
2 teaspoons dried oregano
2 teaspoons crushed red pepper flakes
1 bay leaf
Drop in:
30 uncooked marble sized meatballs
Gently stir in:
1 can white beans, drained and rinsed
2 cups whole spinach leaves
1/2 cup chopped fresh parsley
Mix together in a separate bowl and add to the soup mixture off of the heat:
2 eggs, beaten
1/2 cup grated parmesan
